A terrific snack bread â extraordinarily simple to make. The dough may seem dry as it mixes. Don't add more water; instead, use a rubber spatula to help mix everything together.

raditional food scientists said that it couldn't be done â bread in an hour or even less. But when we received the prototypes of these machines, we started to work on the solution and discovered that it is possible. Vital wheat gluten is one
vital
ingredient in this shortened cycle because it helps the dough to stretch easily. Also, the dough must be quite wet to expand quickly. Be sure to use fast-acting yeast or bread-machine yeast.
Do not use active dry yeast
in the short cycles.
Some of the machines begin to heat as soon as you press the Start button
so the water temperature can remain at room temperature. Others heated so quickly that we had to use cold water. Yet some machines required a much warmer liquid, 110° to 115°. Be sure to check your bread machine manual to find out the recommended temperature for liquids.
We hesitated to provide recipes for the 1 1/2-pound loaf size because they seem so small. However, we know that some of you want only a small loaf, so we included it. We like the appearance of the 2-pound loaves better. They both taste the same â and that's what counts.
Beer Rye Bread tastes so close to a sourdough rye that if you were blindfolded, you wouldn't be able to tell the difference.

1 Place all the ingredients in your bread pan in the order listed.
2 Select the Fast cycle.
3 Open the lid after the machine has kneaded the dough for about five minutes. The dough should be formed into a very soft, sticky ball. If the dough is sticking to the sides or bottom of the pan, you need to add a bit more bread flour. If the dough is crumbly â not in a ball or if the ball appears firm â add more water. Your machine still has kneading time and will work the water into your bread dough. Check on your dough until you are satisfied that a soft, sticky ball has formed.
4 After the machine has completed the baking cycle, remove the pan from the machine and transfer the bread from the pan to a wire rack to cool. If you cut the bread before it has cooled for about an hour, it will look doughy. It must cool completely to allow the structure of the bread to set.
