3. Cover. Cook on Low 5-6 hours, or until potatoes are tender.

10-Layer Slow-Cooker Dish

6 medium potatoes, thinly sliced

1 medium onion, thinly sliced

salt to taste

15-oz. can corn

15-oz. can peas

¼ cup water

1½ lbs. ground beef, browned

10¾-oz. can cream of mushroom soup

1. Layer 1: ¼ of potatoes, ½ of onion, salt, and pepper

2. Layer 2: ½ can of corn

3. Layer 3: ¼ of potatoes

4. Layer 4: ½ can of peas

5. Layer 5: ¼ of potatoes, ½ of onion, salt, and pepper

6. Layer 6: remaining corn

7. Layer 7: remaining potatoes

8. Layer 8: remaining peas and water

9. Layer 9: ground beef

10. Layer 10: soup

11. Cover. Cook on High 4 hours.

Hamburger Potatoes

Ideal slow-cooker size: 4-qt.

3 medium potatoes, sliced

3 carrots, sliced

1 small onion, sliced

2 Tbsp. dry rice

1 tsp. salt

½ tsp. pepper

1 lb. ground beef, browned and drained

1½-2 cups tomato juice, as needed to keep dish from getting too dry

1. Combine all ingredients in slow cooker.

2. Cover. Cook on Low 6-8 hours.

Makes 8 servings

Prep. Time: 15 minutes

Cooking Time: 6-8 hours

Ideal slow-cooker size: 4-qt.

1 lb. ground beef, browned

4-5 potatoes, cut in French-fry-like strips

1-2 onions, chopped

16-oz. can light red kidney beans, drained

¼ lb. Velveeta cheese, cubed

10¾-oz. can tomato soup

1½ tsp. salt

¼ tsp. pepper

1. Layer in slow cooker in this order: ground beef, potatoes, onions, kidney beans, and cheese. Pour soup over top. Season with salt and pepper. Dot with butter.

2. Cover. Cook on Low 6-8 hours.

Serving suggestion: This is particularly good served with
Parmesan cheese
sprinkled on top at the table.

To prevent potatoes from darkening, slice them, then stir a mixture of 1 cup water and ½ tsp. cream of tartar into them. Drain, then place potatoes in cooker and proceed with the recipe.

Beef and Lentils

Makes 12 servings

Prep. Time: 35 minutes

Cooking Time: 6-8 hours

Ideal slow-cooker size: 4- to 5-qt.

3 whole cloves

1 medium onion

5 cups water

1 lb. lentils

1 tsp. salt

1 bay leaf

1 lb. (
or
less) ground beef, browned and drained

½ cup ketchup

¼ cup molasses

2 Tbsp. brown sugar

1 tsp. dry mustard

¼ tsp. Worcestershire sauce

1 onion, finely chopped

1. Stick cloves into whole onion. Set aside.

2. In large saucepan, combine water, lentils, salt, bay leaf, and whole onion with cloves. Simmer 30 minutes.

3. Meanwhile, combine all remaining ingredients in slow cooker. Stir in simmered ingredients from saucepan. Add additional water if mixture seems dry.

4. Cover. Cook on Low 6-8 hours (check to see if lentils are tender).

Note:

Freezes well.

Variation:

Top with sour cream and/or salsa when serving.

Judy’s Hamburger Stew

Makes 6-8 servings

Prep. Time: 15 minutes

Cooking Time: 2-8 hours

Ideal slow-cooker size: 5-qt.

3 large potatoes, sliced

3 carrots, sliced

1 lb. frozen peas

1 onion, diced

2 ribs celery, sliced thin

salt to taste

pepper to taste

1½ lbs. ground beef, browned and drained

10¾-oz. can tomato soup

1 soup can water

1. Put vegetables in slow cooker in layers as listed. Season each layer with salt and pepper.

2. Layer beef on top of celery. Mix together soup and water. Pour over ground beef.

3. Cover. Cook on Low 6-8 hours, or on High 2-4 hours, stirring occasionally.

Variation:

Substitute 28-oz. can whole, or diced, tomatoes in place of tomato soup and water.

Prep. Time: 20 minutes

Cooking Time: 4¼-6¼ hours

Ideal slow-cooker size: 4-qt.

2 lbs. ground beef, browned

1 tsp. salt

½ tsp. pepper

¼ cup chopped onions

1 cup canned tomato soup

6 potatoes, sliced

1 cup milk

1. Combine beef, salt, pepper, onions, and soup.

2. Place a layer of potatoes in bottom of slow cooker. Cover with a portion of the meat mixture. Repeat layers until ingredients are used.

3. Cover. Cook on Low 4-6 hours. Add milk and cook on High 15-20 minutes.

Variations:

1. Use home-canned spaghetti sauce instead of tomato soup.

2. Add a layer of chopped raw cabbage after each layer of sliced potatoes to add to the flavor, texture, and nutritional value of the meal.
