Orange Coconut Cookies
This easy, full proof recipe was created by Dennis Madsen, innkeeper and chef,

Ingredients:
1 box Duncan Hines Orange Supreme Cake Mix, divided*
2 eggs
¼ cup white sugar
½ cup vegetable oil
1 cup sweetened coconut, divided*
In the bowl of your mixer,
Mix eggs, oil, and sugar.
Add ½ box dry cake mix. Mix well.
Add ½ cup coconut. Mix.
Repeat.
Drop on cookie sheet. Dennis uses a #70 cookie scoop, about 1 T.
Bake for 12 minutes at 365 degrees.
Cool on wire rack.
Eat as soon as cool.
Makes about 3 ½ dozen cookies.

*Save the left-over ingredients in the freezer for next time.
