Keeping healthy fats healthy: Smoke points

A
smoke point
refers to the temperature at which an oil is too hot to remain stable and starts breaking down and creating free radicals. When the oil starts to literally give off smoke, you've reached that point. You need to rinse the pan and add fresh oil. The more saturated the fat, the more stable it is and the higher temperature it can endure before becoming unhealthy.

Oils good for high-heat cooking include

Butter and ghee

Coconut oil

Duck fat

Lard (pork fat)

Schmaltz (chicken fat)

Tallow (beef fat)

Traveling Paleo

Traveling can be stressful, and that stress is compounded when you're worried about what you're going to eat after you arrive. However, there are ways you can make your trip Paleo, or at least Paleo-ish. Packing these foods for your trip can make a big difference:

Avocadoes

Sugar- and additive-free beef jerky

Bottled water

Coconut flakes

Cooked chicken slices

Cut-up veggies

Fresh-cut fruit

Hard-boiled eggs

Nuts

Paleo-approved deli meats
