MEAT AND VEGGIE MUFFINS

Meatloaf by any other name, these meat and veggie muffins are small so they cook much more quickly than meatloaf. That means you can get them on the table faster. Serve with one of the delicious salads from the salads chapter, as well as a side of homemade Ketchup (

).

1 zucchini, ends cut flat and spiralized into spaghetti noodles

1 carrot, peeled, ends cut flat, and spiralized into spaghetti

½ pound ground beef

½ pound ground pork

½ onion, finely chopped

2 garlic cloves, minced

1 teaspoon dried thyme

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon homemade Sriracha (
here
) or store-bought

1 egg, beaten

½ cup almond milk

½ cup almond meal

1 teaspoon salt

½ teaspoon freshly ground black pepper

Homemade Ketchup (
here
) (optional)

1. Preheat the oven to 450°F.

2. In the bowl of a food processor fitted with a chopping blade, pulse the zucchini and carrot noodles until they resemble rice, about 20 one-second pulses.

3. In a large bowl, combine the carrot and zucchini rice with the ground beef, ground pork, onion, garlic, mustard, Worcestershire sauce, sriracha, egg, almond milk, almond meal, salt, and pepper. Mix well with your hands.

4. Fill each muffin of a 12-muffin tin with the meatloaf mixture. Bake in the preheated oven for 20 minutes, or until done.

 

Substitution tip:
You can make this meatloaf from 1 pound of ground beef and eliminate the ground pork entirely, if you wish.

SPICY ASIAN ZUCCHINI NOODLES
WITH PORK AND PEANUT SAUCE

PREP TIME: 15 MINUTES, PLUS 4 HOURS MARINATING / COOK TIME: 25 MINUTES

Peanut sauce is the perfect sauce for zoodles, coating them with fatty, nutty goodness. The peanut sauce tempers the heat, while the pork adds extra protein for a healthy, balanced meal.
