ZUCCHINI BREAD

PREP TIME: 15 MINUTES / COOK TIME: 45 MINUTES

Zucchini bread is pretty standard fare in the late summer and early autumn when all of the gardeners are overrun with zucchini and trying to share it with others. If you’re so lucky as to have someone offer you their fresh, homegrown zucchini, snap it up. You can make this tasty bread.

PER SLICE:

2 tablespoons coconut oil, melted, divided

1 zucchini, ends cut flat and spiralized into spaghetti noodles

½ cup coconut flour

¾ teaspoon baking powder

½ teaspoon ground nutmeg

1 tablespoon ground cinnamon

¼ teaspoon stevia

¼ teaspoon salt

2 eggs ¼ cup coconut milk

1 very ripe banana, mashed

1. Preheat the oven to 350°F.

2. Grease a loaf pan with 1 tablespoon of coconut oil.

3. Cut the zucchini noodles into 1- to 2-inch pieces

4. In a large bowl, sift together the coconut flour, baking powder, nutmeg, cinnamon, stevia, and salt.

5. In a small bowl, whisk together the eggs, coconut milk, remaining 1 tablespoon of coconut oil, and mashed banana until well combined.

6. Add the wet ingredients to the dry ingredients and stir until just combined.

7. Fold in the zucchini noodles.

8. Pour the mixture into the prepared loaf pan and bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes.

9. Cool on a wire rack.

 

Cooking tip:
Coconut flour is a very thirsty dry ingredient. Therefore, you want to work quickly after incorporating the wet ingredients with the dry so it doesn’t soak up too much liquid.

CARROT MUFFINS

PREP TIME: 15 MINUTES / COOK TIME: 25 MINUTES

Mashed bananas make this batter really moist and flavorful. These muffins make a terrific sweet treat or work really well for breakfast or a quick snack. The carrots add an earthy sweetness to these tasty muffins, and as long as you eat only one, your carb counts stay low.
