Four-Cheese Pasta with Cauliflower

 

The flavors of this dish is just overloaded with cheese that you might think that this is mac and cheese. This dish is just so amazing all on its own!

 

Yields:
Makes 7 Servings.

 

Ingredients:

2 tbsps. Olive oil

1 ½ cups Whole milk

2 tbsps. Cream cheese

1 ½ tbsps. All-purpose flour

Salt and pepper to season

2 Garlic cloves, minced

1 Shallot, minced

¾ cup Cheddar cheese, grated

½ cup Monterey jack cheese, grated

¼ cup Parmesan cheese, grated

½ tsp. Dijon mustard

4 cups Spiral pasta

2 cups Cauliflower, cut into florets and steamed

 

Method of Preparation
:

  1. Cook the pasta and cauliflower. Cook according to the pasta’s packaging instructions. Reserve 1 cup of the pasta water.
  2. Using a large pan over medium heat, pour oil and sauté both the garlic and onions until fragrant.
  3. Pour the milk, cheese, flour and whisk until smooth. Season with salt and pepper. Simmer for 5 minutes. Remove the pan from the heat and stir in the rest of the cheese and mix until the cheese has melted.
  4. Toss in the cooked pasta and cauliflower into the pan. Mix until they are well combined. Serve and enjoy!
Spaghetti with Cauliflower Green Olives

 

The sweetness of the cauliflower plus the savory taste of the olives just makes this dish amazing to the taste buds! The parmesan elevates this dish to another level!

Ingredients:

1 ¼ cups Green olives, chopped

½ cup Parsley, minced

½ cup Olive oil

1 head of Cauliflower, cut into florets

½ tsp. Salt

3 Garlic cloves, minced

½ tsp. Red pepper flakes

¼ cup Water

¾ pound Spaghetti

1 ½ cups Grated Pecorino romano cheese

 

Method of Preparation
:

  1. Using a food processor, toss in the olives and parsley, process until coarsely chopped. Set it aside in a bowl.
  2. Cook the pasta according to the packaging’s instructions. Drain and reserve 1 cup of the pasta water.
  3. Using a large pan over medium heat, pour oil and sauté the cauliflower and season it with salt. Cook until golden. Toss in the garlic and pepper flakes. Cook for 5 minutes or until tender. Set it aside.
  4. Sprinkle the cheese over the cauliflower and mix until well combined. Toss in the drained pasta and reserved pasta water. Mix until the pasta is well combined. Serve and enjoy!
Cheesy Baked Penne with Cauliflower and Crème
Fraîche

 

A dish so creamy you might think that this is just like mac and cheese. But it isn’t! This amazing dish combines all the cheeses and cream to create this dish that will just amaze your family and friends!

 

Yields:
Makes 8 Servings.

 

Ingredients:

1 pound Cauliflower, cut into florets

1 can Stewed tomatoes

5 tbsps. Butter

½ cup Green onions, chopped

Salt and pepper to season

2 tbsps. All-purpose flour

1 cup Heavy cream

3 cups Gruyere and Fontina cheese

¾ cup Parmesan cheese

1 cup Crème fraiche

1 tbsp. Whole grain mustard

3 ½ cups Penne pasta

 

Method of Preparation
:

  1. Preheat the oven to 350
    °F.
  2. Using a large pot filled with boiling water over medium heat, toss in the cauliflower and boil for 5 minutes or until tender. Drain and return the boiling water into the pot.
  3. Cook the pasta in the same pot, following the packaging’s instructions. Set the pasta aside.
  4. Using a large pan over medium heat, toss in the butter and allow the butter to melt. Sprinkle the flour and stir until it forms into a paste.
  5. Slowly add the milk and whisk until smooth and the sauce thickens. Add the cheeses and 2 cups of the gruyere and fontina cheese. Cook until they have all melted. Season with salt and pepper. Remove the sauce from the heat.
  6. Toss in the pasta and the cauliflower into the sauce. Mix until well combined.
  7. Using a large oven-proof dish, lightly butter the dish and pour the pasta into the dish. Sprinkle the remaining cheese over the pasta and bake in the oven for 10-20 minutes or until the top is golden. Serve and enjoy!
Dessert Cauliflower Pizza

Ingredients:

½ cup Hazelnut spread

¼ cup Slivered almonds

 

To make the crust:

¼ cup Rolled oats

½ cup Cauliflower, pulsed in a food processor

1 Egg white

¼ tsp. Vanilla extract

¼ tsp. Cinnamon

2 tbsps. Honey

 

Method of Preparation
:

  1. Preheat the oven to 425
    °F.

  1. Using a blender, pour the oats and pulse them for 2-3 seconds. Place the

  5. Remove the parchment paper and allow the crust to cool.

To complete the dish:

  1. Spread the hazelnut spread and sprinkle the almonds.

Ingredients:

1 head of Cauliflower, cut into florets

1 cup Coconut milk

2 tbsps. Coconut water

2 Eggs, beaten

1 tsp. All spice

1 tbsp. Honey

 

Method of Preparation
:

  1. Using a food processor, process the florets until they look like the consistency of rice. Set them aside.
  2. In a pot over medium heat, pour the milk, water, and cauliflower. Mix and combine. Pour the eggs and mix again to combine. Sprinkle the all spice and honey.
  3. Allow the mixture to simmer for 10-15 minutes. Once the cauliflower is tender.
  4. Remove from the stove and serve it in a bowl with a garnish of fresh fruits of your choice. Serve and enjoy!

Ingredients:

½ cup finely chopped cauliflower

2 tbsps. Honey

4 oz. Cream cheese

2 Egg yolks

½ cup Coconut milk

½ cup Whole milk

1 tsp. Vanilla extract

½ tsp. Cinnamon

 

Method of Preparation
:

  1. Pour the chopped cauliflower, ¼ cup of the milk, extract, cinnamon in a microwave-proof bowl. Microwave it for 1 ½ minutes. Take the bowl out and let it sit for 15 minutes.
  2. Beat the yolks with ¼ cup of the coconut milk. Set them aside.
  3. Using a small pot over medium heat, pour the almond milk and cream cheese. Stir the mixture constantly until thick. Once thick, pour the cauliflower mixture and egg mixture. Mix until they are well combined and start to thicken again.

¾ cup Cauliflower, processed to look like rice

 

To make the wet ingredients:

¼ cup Coconut water

3 tbsps. Canola oil

3 tbsps. Apple sauce

½ cup Cocoa powder

3 tbsps. Honey

1/8 tsp. Salt

Method of Preparation
:

  1. Preheat the oven to 375
    °F.
  2. Lightly oil a 9” spring form pan. Set it aside.
  3. Using a pot over medium heat, combine the coconut oil and milk chocolate chunks. Allow the chocolate to melt and set it aside.
  4. Combine all the ingredients into a bowl and the melted chocolate. Mix until they are well combined set it aside.
  5. Using the lightly oiled spring form pan, pour the cake mix into the pan and bake it in the oven for 30 minutes. Take the pan out of the oven and allow it to rest for at least 15 minutes befor serving. Enjoy!
