Cauliflower and Chocolate Ice Pops

 

A Simple dessert that the children or family will love. The sweetness of the chocolate and cauliflower puree makes this a healthier alternative to those store bought popsicles!

 

Yields:
Makes 4 Servings.

 

Ingredients:

2 cup Cauliflower puree

½ cup Chocolate chips, melted

1 tsp. Brewed coffee

1/2 tsp. Vanilla extract

Pinch of cinnamon

 

Method of Preparation
:

  1. Combine all the ingredients into a bowl and pour it into a popsicle mold.
  2. Stick Popsicle sticks into each mold and refrigerate overnight.
  3. Serve and enjoy!
Cauliflower and Almond Churros with Chocolate Sauce

 

Churros is a classic Mexican dish that is improved with the help of the cauliflower and almonds. Combine it with a side of chocolate sauce just helps this dish complete itself!

 

Yields:
Makes 4 Servings.

 

Ingredients:

To make the churro batter:

2 cups Cauliflower puree

1 cup Water

2 tbsps. White sugar

½ tsp. Almond extract

1 tbsp. Vegetable oil

1 cup Self-rising flour

¼ tsp. Salt

Vegetable oil for deep frying

 

To make the sauce:

½ cup Semi-sweet chocolate chips

1 cup Milk

2 tsps. White sugar

1 tsp. Cornstarch

 

Method of Preparation
:

To make the churro batter:

  1. Using a pot over medium heat, pour the water, sugar, extract, oil, and cauliflower and boil.
  2. Remove from the heat and add the flour and salt. Return to the heat and mix until the mixture turns into this ball of paste. Allow the mixture to cool and set it aside.
  3. Place the churro batter into a piping bag and set it aside.

To make the sauce:

  1. Using a pot over medium heat, pour all the ingredients into the pot and bring it to a boil. Whisk until smooth. Pour the sauce into a bowl and set it aside.

To complete the dish:

  1. Using a large pot, pour oil into the pot until its 1” deep and preheat it over medium heat.
  2. Pipe the batter to 2” long churros into the hot oil. Fry each churro for 3 minutes, flipping them ½ way until golden on each side.
  3. Set the churro in a plate lined with paper towels. Repeat the same process with the rest of the batter. Serve with the side of the chocolate sauce and enjoy!
Lemon Cauliflower Pudding

 

A tangy and sweet dessert something for the adults to try. The lemon and cauliflower makes this dessert something to remember!

 

Yields:
Makes 2 Servings.

 

Ingredients:

3 cups Cauliflower puree

1 cup Whole milk

3 tbsps. White sugar

2 tsps. Vanilla extract

1 tsp. Lemon zest

¼ cup Lemon juice

 

Method of Preparation
:

  1. Using a pot over medium heat, combine all the ingredients into the pot and allow it to boil for 5 minutes.
  2. Pour into a bowl and refrigerate overnight.
  3. Serve and enjoy!
