* 3 ripe bananas
* 2 eggs
* 1 ¾ cups flour
* 1 ⅓ cups sugar
* ½ cup vegetable oil
* ¼ cup of milk
* 1 teaspoon of baking soda
* 1 teaspoon of vanilla
* ⅓ – ½ cup of chopped walnuts (if desired)
Directions
* In a bowl, mix together oil, eggs, sugar, and milk
*Mix in the vanilla and mashed bananas until combined
* Add the baking soda and flour and mix (about 2-3 minutes)
* If using nuts, add and combine into the banana mixture
* Pour into the greased loaf pan
*Bake in a preheated 325 degree F oven for 1 hour and 20 minutes or until a toothpick inserted in the center comes out clean
LEMON AND CHILI CHICKEN
Ingredients
* 6 chicken breasts
* ¼ cup extra virgin olive oil
* 2 fresh lemons
* 3 cloves garlic, crushed
* ½ tbsp chili powder (for mild flavor)
* 1 tsp red chili pepper flakes
* Salt and pepper, to taste
Directions
*Place chicken breasts in a single layer in a roasting pan or dish; sprinkle with salt and pepper
*In a small bowl, zest the two lemons; cut them in half and squeeze their juice into the bowl
*Add olive oil, garlic, chili powder and chili pepper flakes. Whisk together until combined
*Pour marinade over the top of the breasts
*Cover the dish with plastic wrap and refrigerate for 1½ -2 hours
*Preheat the oven to 375 degrees F
*Remove the plastic wrap and cover the roasting pan or dish tightly with foil. Cut a few slits in the foil around the edges to vent
*Place chicken in the oven and cook for about 1 hour, until the internal temperature reaches 170 degrees F
*Remove the foil; Raise the oven temperature to 425 degrees F
*Bake the chicken for about 10 more minutes
