When you choose a digestive enzyme supplement, be sure to look for one that is vegan and plant-based, rather than one that contains enzymes from bovine animals (cows or oxen) or other animals or animal products. Plant enzymes may be more active at a fuller pH range than animal-based enzymes. Choose a supplement that contains a blend of lipase, amylase and protease, to help efficiently digest fats, starches and proteins. Cellulase is another category of digestive enzymes and can also be useful in a supplement, as it breaks down cellulose and chitin, a fiber similar to cellulose that is found in the cell wall of candida.

BEAUTY DETOX SECRET #3: PROBIOTIC & ENZYME SALAD

Probiotic & Enzyme Salad is composed of raw, cultured vegetables that have been chopped and left in airtight glass containers at room temperature for several days. This allows the
beneficial lactobacilli and enzymes that are already naturally present in the vegetables to flourish, creating a food that is extremely rich in probiotics (friendly bacteria), enzymes and minerals. It is really raw sauerkraut, but usually when we hear that word, we think of the soggy, salty food that is sold at hot dog stands or in supermarkets to add to meat products. That is not what we are talking about here! Commercial sauerkraut is loaded with refined salt and pasteurized to high temperatures, which destroys its important benefits. Raw sauerkraut is a powerful source of probiotics and enzymes—two essentials for healthy digestion, improved Beauty Energy and ongoing cleansing.

Years ago my Greek friend Yiannis told me about a farm with a table at the Union Square farmers' market that sold delicious raw sauerkraut and other cultured vegetables. Since I frequent that farmers' market several times a week, I decided to check it out. I had studied the benefits of cultured foods and had tried some of Dr. Ann Wigmore's rejuvelac recipe, but I had really never consumed cultured foods regularly to experience the benefits firsthand.

BEAUTY TIP

The Power of Raw Apple Cider Vinegar

Raw apple cider vinegar is the only acceptable vinegar we want to consume on a regular basis, since it is non-acid-forming. I know…you are probably wondering what will become of one of your favorite salad dressing ingredients—balsamic vinegar. Balsamic vinegar is okay for special occasions, like weddings and formal sit-down dinners, where the salads are always pre-made. But since it is so acid-forming, it should
not
be an everyday staple in our diet.

More about the good stuff! Raw apple cider vinegar actually helps promote optimal digestion and encourages the growth of friendly bacteria in our bodies. It is great in salad dressings. An age-old digestive remedy calls for sipping one tablespoon of the vinegar diluted in a cup of water twenty minutes before meals. Raw apple cider vinegar is high in minerals and potassium, which help promote cellular cleansing. It has antiseptic qualities and can help cleanse our digestive tract, and it promotes bowel movements.

Be sure that you buy a brand labeled “raw” and “unfiltered.” Pasteurized apple cider vinegar does not have these healing properties!

I loved the taste, and I began to pile raw sauerkraut on my daily dinner salads and sometimes had it at lunch. I also found that if I happened to be eating grains, like millet, or a protein dish, like a nut pâté, the raw sauerkraut greatly helped me digest the other foods. I had more energy and, yes, I was going to the bathroom much more frequently. Exciting stuff!

I am now convinced that raw, cultured vegetables are among the most important foods of our modern day. As they are powerful, extremely helpful weapons to clean out sludge, and to look younger and more radiant, I like calling these powerful raw, cultured veggies Probiotic & Enzyme Salad, so we are reminded of their key benefits.

BEAUTY TIP

Yogurt and Kefir

Many people look to yogurt and kefir as sources of probiotics. I do not recommend consuming yogurt, which is made of pasteurized dairy milk. Pasteurized dairy products are clogging foods and contain high levels of the protein casein. Having yogurt in the morning, when most of us want to eat it, is especially clogging as it creates a traffic jam right in the beginning of our whole day. There really is no purpose for yogurt when we are taking a daily probiotic and regularly eating Probiotic & Enzyme Salad. If you can find raw goat's milk kefir (which may be difficult to get a hold of), that would be an acceptable choice and easier to digest than any cow's milk products, though it is certainly not recommended as a daily food.

While cultured foods are a critical food group in many cultures, such as kimchi in Korea and kefir in Russia, the American diet and the Western diet in general are sorely lacking in these foods. Moreover, any amount of friendly bacteria that may be present in our food supply is destroyed by the commercial food industry. Our produce is sprayed with chemicals and contaminants and grown in soil stripped of beneficial microorganisms, and livestock and other animals are often fed with grains that have been chemically altered and laced with antibiotics and steroids.
