ELAINA LOVE

Elaina Love is a professional raw food chef, instructor, author, and founder and operator of Pure Joy Living Foods.

Elaina has been a presenter at events such as The South Bay Vegetarian Faire, The Portland Raw Foods Festival, Raw World, Nature’s First Law’s Eden retreats, and many more. She also conducts monthly classes in California and travels nationwide to personally train people in their own kitchens. She has catered raw food retreats, events, and weddings for many recognized leaders in
the living food community. She spoke and taught culinary classes at the 2001, 2002, and 2003 Portland Raw Foods Festival.

Elaina and Matt Samuelson co-created the menu at David Wolfe’s 2002 book release party and headed the team of chefs to serve the largest raw food fine dining event yet presented. With a total of 300 plates served, the party was regarded as a true accomplishment in the raw culinary arts.

Elaina’s recipes have been published internationally. She is a faculty member for the Living Light Culinary Arts Institute where she helps to conduct weeklong raw food trainings for professional chefs and instructors. She is also a mom to Dominic, age 7, and she understands how to teach kids to enjoy healthy, delicious foods.

RHONDA J. MALKMUS

Rhonda J. Malkmus was born and raised in north central Iowa. During her junior high years she became a Christian and dedicated her life to the Lord. After graduation, she left the farm and lived in various cities in the Mid-West, finally settling in Prairie du Chien, Wisconsin, nestled along the Mississippi River.

In 1981 an event occurred that would change Rhonda’s life forever. She was involved in a car/train collision that could have been fatal, and credits God for intervening to protect her and her passenger. Both walked away with no broken bones. The accident left Rhonda with arthritis in every joint in her body, however.

When she met Dr. Malkmus in 1990 she was in constant pain. When he shared the “Hallelujah Diet” with her she decided to try it. After being on the “Hallelujah Diet” a short time, she realized that the pain was beginning to lessen. Within a year she could not only walk a block but a 15-minute mile. She has been on the diet for years now and all her pain from the car accident is a thing of the past.

Dr. George and Rhonda Malkmus initiated Hallelujah Acres in 1992 as a Christian health ministry to help alleviate the suffering they were seeing in the lives of so many people. Their goal is to help lead people back to what they see as God’s original diet for mankind. They have brought new hope and health to multitudes with the message, “You do not have to be sick.” They have taken this ministry to the world with newsletters, books, and Dr. Malkmus’ seminars and radio and television appearances, including the 700 Club. PAUL NISON

Until he was 19 years old, Paul Nison ate the Standard American Diet (SAD). Then he received a wake-up call, and was diagnosed with ulcerative colitis.

For years, Paul endured a long list of painful symptoms. Every time he went to the doctor, he was told to stay away from certain foods temporarily. After a while he would feel better and resume his normal diet. Soon after, he would get sick again.

Paul started to see a pattern. He stopped eating dairy altogether, then eggs, meat and sugar, and told his doctor he felt better without these foods. She told him that food had nothing to do with his condition.

At 23, Paul left his stressful job in the financial district in New York as an office manager for a big Wall Street company, and moved to West Palm Beach, Florida. He was still having colitis flare-ups, but not as often or severe. By seemingly sheer coincidence, he moved near a place called The Hippocrates Health Institute. Paul would visit the institute often during his daily walks around the neighborhood.

At the institute, Paul learned about the raw-food lifestyle and about live foods. He immediately put himself on an 80-percent raw-food diet. It made enormous difference to Paul’s health, and he stuck with it—even though his doctor said that raw foods were no good for his condition.

At 25, Paul moved back to New York and resumed working the stressful job he had left. In New York, he met many people who adopted a raw-food diet, and began reading more books on the raw diet and lifestyle. In a bookstore in Manhattan Paul found a book by David Klein called
The Fruits of Healing-A story about a Natural Healing of Ulcerative Colitis
. It was exactly what he needed to read. He then heard David Wolfe of Nature’s First Law speaking on a local radio show about the raw-food diet. Soon after, he decided to switch to a 100-percent raw-food diet, and joined a raw-food support group.

The more Paul got involved with the raw-food lifestyle, the more positive his outlook became on life, and his health consistently improved.

Since going 100-percent raw, Paul has completely overcome ulcerative colitis. He feels better than ever and has become increasingly inspired about life. He quit his stressful job and began working as a raw-food chef in a vegetarian restaurant. He organizes raw-food potlucks every month.

PHILIP McCLUSKEY

Philip McCluskey is a 31-year-old entrepreneur, motivational speaker, and author, and is passionate about raw foods! Being overweight his entire life, and after 30 failed diet attempts, he surpassed morbid obesity and skyrocketed to a max weight of 400 lbs. He thought gastric bypass surgery was the only option, and after a month of tests he was ready to have it done when he discovered raw foods. He switched to eating 100% raw vegan overnight and has never been off a day since.

To date he has lost over 200 lbs and is on the fast track to rediscovering his life in a way he never thought was imaginable. Everything in his life has changed including his health, mental clarity, spiritually, job, and a newfound passion for raw food. KAREN PARKER

Karen Parker is Master Chef and Culinary Consultant for the Tree of Life Rejuvenation Center in Patagonia, Arizona. Her culinary expertise combines the concepts of elegant and gourmet cuisine with raw and living foods. Because flavor is the true ambassador of any dietary culture, her approach fuses sumptuous
flavors and textures with the artistry of nature, stimulating the senses and satisfying the diner’s physical and emotional faculties.

Karen’s role at Dr. Gabriel Cousens’ Tree of Life Rejuvenation Center is to counsel clients one-on-one in regard to live food preparation and the individual’s goals. Those goals range from lifestyle implementation issues, including nutritional and healing-related concerns, as well as the demands of one’s family, time, and work. Karen’s particular focus is to provide personalized instruction so that clients can easily create truly delicious meals that taste even better than their cooked counterparts. She provides this service at the Tree of Life and also travels to clients’ homes around the country. She is also available for restaurant and spa menu consultations.

Karen is also the Lead Instructor for the culinary component of the Masters Program in Live Vegan Nutrition, offered through the University of Integrated Learning. Karen is thrilled to be a part of the first Masters program in the world focusing on the live food lifestyle. She facilitates gourmet food preparation classes in the Live Food Chef Apprenticeship Program and in specialty workshops at the Tree of Life.

Before relocating to Arizona and the Tree of Life, Karen offered workshops in live-food nutrition and its preparation in the state of Washington, often in conjunction with yoga retreats. She holds a Bachelor’s degree from the University of Nevada, and did her coursework in Environmental Management and in Nutrition and fieldwork in Costa Rica, Panama, and Guatemala.

RHIO

Rhio is a singer, actress and author, as well as an investigative reporter in the area of health. As a performer, she has appeared on over 50 TV shows. Currently she is completing a CD album called
Time to Start Believing Again
, 10 original songs which cover environmental and raw food related themes. Rhio is of Hungarian-Cuban descent and completely fluent in Spanish. CNN and American Journal aired stories on the raw food lifestyle featuring Rhio. She is considered an expert in the area of raw and living foods.

A series of videos is in the works, entitled
What’s Not Cookin’ in Rhio’s Kitchen
, which will demonstrate how to prepare some of the easy, but lesser known raw foods, like yogurts, seed cheeses and ice creams. This series will also
include all categories of foods with a special focus on delicious and satisfying main course dishes. The first DVD in the series is set for release in May 2008.

Rhio is a passionate activist against the genetic engineering of seeds/plants, animals and people. She believes that the multinational corporations, and their political allies in the government, that are promoting GE demonstrate a flagrant disregard and disrespect for the integrity of the Natural World. With an estimated 60–70% of foods in the supermarkets contaminated with GMOs that remain untested and unlabeled, the public is being forced to be the guinea pigs in this colossal experiment. Rhio lectures across the country periodically, encouraging people to take grassroots action to get GE food production banned from their communities and at the very least labeled and tested.

As an avid organic gardener, Rhio is currently developing an organic farm in upstate New York. She has incorporated permaculture principles and created a diverse variety of heirloom fruits, berries, nuts, vegetables, herbs, and wild edibles on the property.
