Amazing Salad

 

This great salad is an amazing way to start a meal. The combination of the herbs with the sweetness of the walnuts and that particular flavor that the cherries have will have you wanting more.

 

Yields:
8 servings

 

Ingredients

For the walnuts:

3 tablespoons walnuts, chopped

Cooking spray

1 tablespoon sugar

 

For the dressing:

1 tablespoon champagne vinegar

1/2 cup apple cider

1/8 teaspoon salt

1/4 cornstarch

3 tablespoon water

1/8 teaspoon pepper

1 tablespoon shallots, finely chopped

 

Remaining ingredients:

2 cups sweet cherries, pitted

1/4 cup blue cheese, crumbled

8 cups herb salad mix

 

Method of Preparation:

For the walnuts:

  1. In a small saucepan place the sugar and cook over medium heat until it dissolves. Make sure to stir constantly so that the sugar doesn’t burn and dissolves regularly.
  2. Reduce the heat and incorporate the nuts.
  3. Cook them over low heat until golden.
  4. Take a foil that has been coated with cooking spray and spread the nut mixture on it.
  5. Allow it to cool completely and then break into small pieces.

 

For the dressing:

  1. In a saucepan, pour the cider. Bring it to a boil over medium-high heat. Cook for a couple of minutes, until the it reduces to about 2 tablespoons.
  2. In a bowl, mix together the water and cornstarch and incorporate it to the pan.
  3. Bring the mixture to a boil and stir it constantly. Allow it to cook for about 30 seconds.
  4. Remove the mixture from the heat.
  5. Incorporate the vinegar, pepper, shallots and salt. Allow the dressing to cool.

 

To prepare the salad:

  1. Place the salad mix in a bowl.
  2. Drizzle the dressing over it and toss everything together.
  3. Divide it into 8 equal portions and top the salad with cheese, walnuts and cherries.
Cherry and Goat Cheese Deliciousness

 

Want to shine at a dinner party bringing something delicious? This is the recipe for you, very simple to make and in only a few minutes this dish will make you the spotlight of the party.

 

Yields:
4 servings

 

Ingredients

1/4 teaspoon minced thyme

1 pound sweet cherries, pitted

4 ounces goat cheese

2 teaspoons balsamic vinegar

2 tablespoons brown sugar

 

Method of Preparation:

  1. Take a skillet and place the sugar and cherries.
  2. Cook the cherries for about 4 or 5 minutes over medium-high heat. Make sure you stir occasionally.
  3. Incorporate the thyme and vinegar; keep cooking the mixture for another minute.
  4. Take the goat cheese and slice it in 4 rounds.
  5. Top the goat cheese with the warm cherry compote and serve.
Cherry Chicken Wraps

 

These very simple and very healthy lettuce wraps make a great entrée whether it is for lunch or dinner.

 

Yields: 
6 servings

 

Ingredients

1 pound dark sweet cherries, halved and pitted

1 1/4 pounds chicken breast halves, chopped into bite pieces

1 tablespoon minced ginger root

2 tablespoons rice vinegar

12 lettuce leaves

1 tablespoon honey

1/3 cup almonds, sliced and toasted

2 tablespoons teriyaki sauce

1 1/2 cups shredded carrots

2 tablespoons canola oil

1/2 cup green onions, chopped

 

Method of Preparation:

  1. In a large skillet, pour 1 tablespoon canola oil and heat it over medium-high heat.
  2. Incorporate the chicken and ginger and sauté them together for about 8 to 10 minutes, the chicken must be cooked all the way through.
  3. In a bowl, place the honey and incorporate the vinegar, teriyaki sauce, and canola oil.
  4. Whip all the ingredients together.
  5. Incorporate the cherries, green onions, almonds, chicken mixture and green onions.
  6. Toss everything together to combine the ingredients.
  7. Place the lettuce leaves in a working surface. Divide the mixture evenly in 12 parts and spoon each part to the center of a lettuce leaf.
  8. Roll the leaf around the filling and serve 2 leaves in each dish.
Cherry Ricotta Crostini

 

The deliciousness of this recipe can’t be compared to its simplicity. Take a couple of minutes to discover this wonderful dish.

 

Yields:
8 crostini

 

Ingredients

For the cherries:

1/2 cup sugar

2 tablespoons cornstarch

2 cups tart cherries

 

For the crostini:

Butter

Pistachios, crushed

Orange zest

Baguette, sliced and baked

Sea salt, for sprinkling

Ricotta cheese

 

 

Method of Preparation:

For the cherries:

  1. Place the sugar, cornstarch and cherries in a baking dish. Toss them together.
  2. Take the baking dish and place it in the oven.
  3. Cook the cherries for about 45 minutes.
  4. It will be ready when the juices thicken and are bubbly. Make sure you stir the mixture every 15 minutes.
  5. Take out of the oven and let it cool entirely. Chill it in the refrigerator.

 

For the crostini:

  1. Take the slices of the baguette and butter one of the sides of each one.
  2. Toast under the broiler.

 

For the assembly:

  1. On each baguette slice spread ricotta cheese. Top the cheese with the roasted cherries.
  2. Drizzle the crushed pistachios as well as the sea salt and orange zest.
  3. Serve.
