  1. Cut steak into ¼-inch strips.
  2. In a small bowl, mix together soy sauce, cornstarch, ginger, roasted garlic and bell pepper seasoning, and water. Set aside.
  3. Heat oil in a large nonstick pan over medium-high heat. Add sliced beef in small batches and cook until no longer pink (about 5 minutes). Remove from pan and repeat until all meat is cooked.
  4. If needed, spritz the pan with a bit more oil. Add the veggies and cook for 3 to 4 minutes, stirring frequently.
  5. Add the meat to the veggies and stir in the soy sauce mixture. Continue stirring while the liquid comes to a boil. Simmer for about a minute more.
  6. Serve immediately; or portion out and store in the fridge or freezer until you’re ready to reheat and enjoy.

BLUE CHEESE CUBE STEAK (LOW-CARB DAYS ONLY!)

  1. Turn on oven broiler to preheat.
  2. On stovetop, heat oil in a nonstick pan over medium heat. Add steaks; cook on each side until done to your taste.
  3. Place steaks on broiler pan lined with foil (for easy cleaning!) and top each steak with blue cheese and onion.
  4. Broil steaks just until cheese is melted.
  5. Serve immediately with your favorite side for a low-carb day.
  6. To store: After removing meat from stove, portion it out and store in the fridge or freezer until you’re ready to use it. Separately, portion out onion and blue cheese and store in fridge or freezer until you’re ready to use it. To cook, follow steps 3 through 5 OR place steaks in microwaveable container, top with blue cheese and onion, and cook in microwave.
