1 onion, chopped
1 green pepper, chopped
1 clove garlic, chopped
2 15-oz. cans kidney beans, drained

Supreme Sausage Dish

Cooking Time: 4-5 hours
Ideal slow-cooker size: 5-qt.
1 lb. smoky wieners, cut in 1-inch pieces
2 cups cooked macaroni
1 cup frozen peas,
or
corn
½ cup chopped onions
1 tsp. dry parsley
1 small jar chopped pimentos (about 3 Tbsp.)
¾ cup shredded American,
or
Velveeta, cheese
3 Tbsp. flour
¾ tsp. salt
¼ tsp. pepper
1 cup milk
1 cup water
½ Tbsp. vinegar
1. Combine wieners, macaroni, peas, onions, parsley, and pimentos in greased slow cooker.
2. In saucepan, combine cheese, flour, salt, pepper, milk, water, and vinegar. Cook until smooth and thickened. Pour into slow cooker. Mix well.
3. Cover. Cook on High 1 hour, and then on Low 3-4 hours.
Variation:
Use smoked sausage instead of smoky wieners.

¼ cup water
ground nutmeg

6 fresh bratwurst
2 garlic cloves, minced
2 Tbsp. olive oil
12-oz. can beer
1. Brown sausages and garlic in olive oil in skillet. Pierce sausage casings and cook 5 more minutes. Transfer to slow cooker.
2. Pour beer into cooker to cover sausages.
3. Cover. Cook on Low 6-7 hours.
If you’re in a rush, you can skip browning the meat if the recipe calls for that.
Why do it at all? If you’re working with ground beef, browning it in a skillet allows the drippings to emerge. You can drain them off before putting the browned beef into the cooker, thus reducing the fat content of your finished dish.
If you’re working with a roast, browning it deepens the flavor of the finished dish.
