Pork Roast with Sauerkraut

Cooking Time: 7 hours
Ideal slow-cooker size: 6- to 7-qt.
2 3-lb. pork shoulder roasts
2 large cans sweet Bavarian sauerkraut with caraway seeds
¼ cup brown sugar
1 envelope dry onion soup mix
½-1 cup water
1. Place roasts in slow cooker.
2. Rinse and drain sauerkraut. Combine sauerkraut, brown sugar, and onion soup mix. Layer over roasts. Pour water over all.
3. Cover. Cook on Low 7 hours.
Note:
If you can’t find Bavarian sauerkraut with caraway seeds, substitute with 2 large cans regular sauerkraut and 1 tsp. caraway seeds.
Cooked pasta and rice should be added during the last 1-1½ hours of cooking time to prevent them from disintegrating.

Pork and Sauerkraut

4 large potatoes, cubed
32-oz. bag sauerkraut, drained
1 large onion, chopped
1 large tart apple, chopped
2 Tbsp. packed brown sugar
1 tsp. caraway seeds
1 tsp. minced garlic
½ tsp. pepper
2½-lb. boneless pork loin roast
1. Put potatoes in slow cooker.
2. Combine remaining ingredients, except pork, in slow cooker. Place half of the sauerkraut mixture on top of the potatoes. Add roast. Top with remaining sauerkraut mixture.
3. Cover. Cook on High 3-4 hours.
Pork Spareribs with Sauerkraut

2 small cooking apples, sliced in rings
1½-2 lbs. spareribs, cut into serving-size pieces and browned
1 qt. sauerkraut
½ cup apple cider,

juice
½ tsp. caraway seeds,

1. Layer apples, ribs, and sauerkraut into slow cooker. Pour on juice. Sprinkle with caraway seeds.
2. Cover. Cook on Low 8 hours, or on High 4 hours.
Country Ribs and Sauerkraut

2 27-oz. cans sauerkraut, drained and rinsed
2-3 lbs. country-style pork ribs, cut into serving-size pieces
6 slices bacon, browned
3-4 Tbsp. caraway seeds
2 cups water
1. Place alternating layers of sauerkraut and ribs in slow cooker, starting and ending with sauerkraut.
2. Crumble bacon and mix gently into top layer of sauerkraut. Sprinkle with caraway seeds. Pour water over all.
3. Cover. Cook on Low 7-8 hours.

1 small onion, chopped
2 lbs. pork,
or
beef, ribs, cut into serving-size pieces
1 tsp. salt
¼ tsp. pepper
half a sauerkraut can of water
1. Pour sauerkraut and juice into slow cooker. Add onion.
2. Season ribs with salt and pepper. Place on top of kraut. Add water.
3. Cover. Cook on High until mixture boils. Reduce heat to Low and cook 4 hours.
Serving suggestion: Serve with mashed
potatoes

12-oz. can V8 juice
1. Place ingredients in slow cooker in order listed.
2. Cover. Cook on Low 6-8 hours, or on High 3-4 hours.
Variation:
To take the edge off the sour flavor of sauerkraut, stir in 3 Tbsp. mild molasses or honey before cooking.
