Broccoli with Golden Raisins & Garlic

This is an exciting way to serve broccoli—spicy, sweet, and savory.

 

1 bunch broccoli or 1 bag (1 lb.) frozen broccoli florets

3 cloves garlic

3 T. e.v. olive oil

c. golden raisins

tsp. crushed red pepper

tsp. kosher salt

c. water

Tools needed:
cutting board, chef’s knife, strainer, large pot with lid, measuring cups and spoons, tongs, large spoon, kitchen timer.

How-to:

Smash and peel garlic

Buy
broccoli with compact, bright green florets and sturdy (not bendable) stalks.
Store
unwashed in an unsealed plastic bag in the refrigerator for up to 5 days.

Don’t Panic:
Cutting broccoli florets, smashing garlic, and not overcooking the brocs are the things to think about here—but all without worry.

Cut
the fresh broccoli into florets, leaving about 2 inches of stem attached
. I try to cut all the florets about the same size so they will cook in the same amount of time.
Place
them in a strainer and
pass
under cool running water to wash.
Smash
the garlic and peel.

Place
a large pot on the stove and
turn
the heat to medium. Measure and
pour
in the oil and
heat
until it shimmers (1 to 2 minutes).
Add
the garlic and
cook,
stirring, until light golden brown, about 2 minutes. Now that the oil is flavored,
use
tongs to
take
the garlic out and
discard
.

Add
the fresh broccoli (or frozen broccoli, if using), raisins, red pepper, and salt to the pot and
stir
for about 30 seconds to coat with the oil.
Add
the water,
cover,
and let
steam
for 3 to 5 minutes. You want it to be tender but not mushy.
Stir
again and
serve.
